Boiled Lobster
For those new to seafood recipes, here are some simple instructions on how to boil a lobster.
Ingredients:
- 1 medium-sized lobster
- 1/4 lb. of salt to each gallon of water
Prepare a deep pot of boiling water, salted in the above proportion. Place the lobster in the pot, and keep it boiling from 20 to 45 minutes, according to its size. Occasionally skim. If it boils too long, the meat becomes thready, and if not cooked long enough, the lobster will not turn red. Careful attention must be paid to the color.
To give a nice shine for presentation, rub the shell with a little butter or sweet oil, then wipe it off.
